Cardamom (seeds)
In addition to saffron, vanilla and fennel pollen, cardamom is one of the most exclusive spices.
Goes well with: apples, pears, oranges, legumes, sweet potatoes and other root vegetables, dishes with yogurt sauce, stews, chicken, fish and coffee.
Harmonizes especially with: coffee, anise, bergamot, fennel, cloves, ginger, coriander (seeds), cumin, bay leaves, marjoram, mint, sage and cinnamon.
Tip: Cardamom is invigorating like caffeine. To intensify the aroma, the seeds can be briefly dry roasted.
