Cubeb pepper
This pepper is also called stem pepper and is a “flavor bomb” with a mild spiciness.
The cubeb pepper is one of the classic wild varieties. But it is not a pepper but an interesting, alternative heat maker.
Goes particularly well with game, kidneys, sausage and cabbage. In desserts (mousse au chocolat) the cubeb pepper serves as a contrast and helps you to new experiences.
Can be combined very well with: curry leaves, ginger, clove, juniper, long pepper, lavender, oregano and lemongrass.
Cubebs (Arabic kubâba from Latin cubeba) are the unripe fruits of a climbing plant from Indonesia. The stone fruits are harvested green and dried in the sun until they are deep brown-black.
